It is an exclusive 5-star Relais that came from the careful restoration of the ancient monastery of Saint Catherine, which was originally constructed in 1275 for a community of Benedictine nuns. Their love for history has ensured that this ancient place has preserved the details of the mediaeval monastery. Each and every one of Relais Nun’s 18 prestigious suites is unique with niches, frescoes, cross-vaulted ceilings and yet with all the modern comforts of technology. The clean light hues and the diaphanous consistency of the furniture are an uninterrupted dialogue between the complicity of the past and the lightness of modern design.

Nestled in an intimate and evocative setting, the Relais Nun Assisi’ spa seems like a truly private museum offering guests the full impact of its arcane beauty. When the Saint Catherine Convent, where the Relais now stands, was being renovated, many archaeological features were discovered in the lower levels of the site and these have been very knowledgeably used in the design of the wellness center to create a truly unique ambience where six limestone pillars are reflected in the water of Nun Assisi’s thermal baths, making it an even more magical place. The pillars, reveal a Roman Amphitheatre that once sat at the feet of Mount Subasio. From the Nun Assisi Relais & Spa’ swimming pool, you can admire the important, ancient, pink limestone steps at the top of which a rectangular podium once rose. Inside the Nun Assisi thermal spa there are also two perfectly preserved Roman cisterns with vaulted ceilings where the massage room and the hammam (Turkish bath) are now located.

Umbria is a land famous for strong aromas, for the simplicity of its cuisine and the genuine goodness of its flavours. The exquisite dishes created by the Chef speak of this part of Umbria’s history, using colour and aroma to interpret the multi-faceted aspects this area has to offer. He uses only vegetable oils to prepare his dishes, steaming or preparing them at low temperatures, and takes great care to seek out the very highest quality Umbrian extra-virgin olive oils. His choice of vegetables is selected from among small local growers and according to season to ensure extraordinary freshness. The meat he procures comes from the finest farms in the area. The Chef, and his staff, bake their own bread, roll their own pasta, and make all of the desserts and ice cream every day from scratch. Nun Assisi Relais & Spa Guests at the Restaurant can enjoy their meals in the panoramic terrace of Eat Out Osteria Gourmet, as they admire a splendid view of the Rocca Maggiore and Rocca Minore. The spa….wow. Its been done really well. Large jacuzzi hidden in the corner, massage jets in the dark sultry pool, 4 varying wet rooms increasing in temperature and then into the frigidarium for the final chilling refresher.
