of the local pasta dishes with Pina and her brother Lino
at the Villa Pina in the heart of Sicily, or pick up the
skills needed to turn mozzarella into a mouth-watering creation
at Tenuta Seliano in South Campania. Italians pride themselves
on their ability to cook wholesome, healthy and tasty dishes.
Many well known recipes are passed down from generation
to generation, others are closely guarded secrets and will
only be cooked in one or two villages.

recent years Jamie Oliver, Rick Stein and Marks & Spencer
have all researched the recipes of Southern Italy. They
too spent time with cooks and chefs who are passionate about
their ingredients, their regional dishes, their produce
and their recipes.
